Default Should be enough

That's enough on the server. Can you recreate your profile on the device? It may have cached the IMAP CAPABILITY string.

Default recreated a new profile

but the same.
Also I got the impression IDLE is not switched off, because when I delete a message in the browser connected to zimbra mailbox via https, thunderbird immediatly deletes that message too.

Can you check that it really is disabled with
Code:
zmlocalconfig | grep nio_imap_enable

Default you mean this :

zimbraImapDisabledCapability: IDLE

that's what I get, the server thinks it's off

Default OK, this is weird.

Next step -- telnet to port 143 on that machine and type
Code:
A001 CAPABILITY
and post the transcript of the whole session...
