Default Mail Identities

How can I setup different mail identities?

I've been reading that this can be done with Preferences-Accounts-Persona.

One problem, the from field is a drop down menu. Lots of screenshots I've seen show a text field? Is this because I'm using CentOS?

There's no problem using CentOS and using Persona, I use CentOS5.3 without problems and have no trouble using that feature.

Why not describe the exact steps you're doing and what the exact problem is (perhaps a screensot).

When composing a new mail, I like to choose what will appear in the 'From' field. The setup described above only let me choose from a dropdown menu.
(See attachment) Screenshots on the internet show a input field.

You will have to be "allowed" by an administrator to either send from any address or the administrator can set a list of allowed addresses. It's available in the admin console under the Preferences for your account.
