Modify Subject Line

I know this may seem like a strange feature request (it did to me, anyway), but one of my users would like to have the ability to change the subject line of received email. She gets alot of automated emails and has gotten used to the ability in Outlook where she can change and save the subject line of incoming mail to something more memorable. I showed her the tagging feature, but she did not seem too keen on it.

However, if anyone knows of a way to do this (and I'm just overlooking it), please let me know. Otherwise, I'm passing it along as a feature that (at least) one person would like to see in the future. Thanks.
