Customize Task Progress Field

Our university recently implemented Zimbra and I am an end-user.

As an end user, can I customize the pull-down list "Progress" in the Tasks section in order to reflect the work-flow of my specific department?

Or am I locked into the selections provided?

We are currently using the task list to keep track of purchase orders, it would be nice to update the progress fields to include "for signature", "for quotation" and so on
