Actually I heard back from zimbra support and here the way to do this is:

zmprov sa zimbraMailHost=host.name.com

7.1.1 has this option. Thanks.

This will work. A way to do it via the CLI would ideally be what I want, but this is a solution for now.

I would also be interested in this if anyone figured out a way to do this.
