- look for any errors related to ZD installation in /private/var/log/install.log (under FILES)
have you setup a default browser? (Perferred Applications)
i am not sure how to help you if you can't find any log file newer than 2009.
what types of accounts you have (gmail, yahoo, pop, imap, etc.) ? do you have data saved under Local Folders?

anything in the zdesktop.log?
If you are on snow leopard, you may be running into the issue mentioned here:

this is a very old log you attached here: dated back in "2009-10-02".
no easy way. the main incompatibly is in the index files.
the second beta is coming out in a week. maybe you want to wait and see whether those problems have been addressed?
can you zip and attach the logs here?

please check the permission of this registry key:
HKEY_CURRENT_USER\Software\Zimbra\Zimbra Desktop
make sure it's writable for current user.

Even without considering the different "editions" of Windows (e.g. Home, Basic, Workstation, Professional, Server, MC, etc, etc...), Windows has alreay had "too many" variants: XP, Vista, Windows 7,...
could be an unsupported windows flavor. your best bet is to re-install 1.0.4 and import everything back.
also, please attache jetty.xml here, if possible.
which language your windows 7 is in?
i am expecting something like "sync request ignored...". just last 20-100 lines should be fine.
