Just setup zimbra with split dns or as i would dnsmasq. You may need to make up a domain name if you don't have a valid 1 but will send internal mail using the domain name you have setup
I have never had any issues with installs and I have build about 20 of these in the last 6 months or so.

I have only seen this when we were using z-push. If there was a sync happening when reading an email it would go back to the mailbox.
Gave up with z-push and used zextra's in the end
