Default Migration Advice

We have several domain names that I'll be migrating over from Dovecot (IMAP) to Zimbra. Here are my questions:

1. We have an email address bsmith@company1.com. Bob Smith also has an email address in Dovecot with bsmith@company2.com. Not everyone has an email address with company2.com. But everyone does have an email address with company1.com. Should I create an email account with bsmith@company1.com and an alias with bsmith@company2.com?

2. If the answer to #1 is yes can Bob change his From field in his web client?

Yes- either through the use of personas or through preferences to 'send as any address'.
