Mailadresses in header and international letters missing after import from exchange

We've succesfully had our mail migrated from exchnge to zimbra. There are som outstanding minor issues, and one that's slightly more thant minor: in all the mails we've sent to each other in our office the mailadresses is missing from the mail headers.

Are there any known solutions, scripts to insert mailadresses and/or international letters (æ, ø, å), etc. that we could try to insert the missing data into the headers now that the import/migration to zimbra is done and we're stuck with this issue?
