Currently there is no uninstaller to do this-but drag these to trash:
/Library/PreferencePanes/Zimbra
/Library/Receipts/Zimbra
/Library/Application Support/Zimbra
If you just dragged the zimbra logo in system preferences to the trash it only removes /Library/PreferencePanes/Zimbra.prefPane
