I think you are going to have to post some more information before anyone can tell you whether or not your server will send and receive mail. For starters, the output of the 'ps' command you posted simply shows that it appears you've gotten past the initial problem with 'slapd', and that it is now running. The 'slapd' process is only one part of Zimbra. You might want to look at the Zimbra Admin console web page or look at the output of 'zmcontrol status' to make sure other parts of Zimbra are running as well.
Beyond that, you say you are trying to replace an Exchange server. Are you testing this Zimbra server in the same environment? If yes, you may want to look at the "Split Domain" wiki page which discusses migrating some users over to Zimbra while others remain on the current email server. If you're testing in a totally separate environment do you have things like DNS and MX records setup? These are critical in being able to send and receive mail.
