What is /opt/zimbra/data used for?
How much disk space does it need?
I read the documentation and the only directories I was worrying about are;
/opt/zimbra/store, db, index and log,

It's a bit like /var, IMO. It hold temp files and spool files for postfix.

Our is less than 10GB however we don't use amavisd, spam or clamav, and we don't spool postfix mail locally either.
It also contains the LDAP databases (if your ZCS is uptodate and you have the LDAP service setup), mailboxd temporary folder (imap cache) and quite every temporary/spool folders for the MTA (amavis, altermime, cbpolicyd, etc).
