The question you should ask yourself is this: Is there a version of Zimbra built for that distribution version and is it available on the Download page? If the answer is no then there isn't a build available for that distribution and it's unsupported.
Try it and find out.If you want a stable and reliable mail server, use one of the supported distributions.

Probably so. You might need to use the platform override parameter.
I have not found such documentation...probably because it is not supported yet. If you are bound and determined to do it, please keep some notes and share what you have found.
For example: My notes on installing Zimbra 7.1.3 on Ubuntu Server 10.04.3 LTS
I did not choose Ubuntu 11 because it is not a supported platform yet. My goal is to setup a system we "could" upgrade for support from Zimbra and Ubuntu.

I have successfully installed on my Ubuntu 11.10 Desktop machine following these instructions

That said, the same instructions haven't worked on my Ubuntu 11.10 Laptop - it simply refuses to recognise install.pl as something it can run.
