All right! Zimbra installed succesfully.... but... this still happens on start...

Unable to determine enabled services. Cache is out of date or doesn't exist.
Why is this?

Let's do the install of Zimbra from the beginning, I'd suggest you completely remove it with the following command:

./install.sh -u
When you've done that, go through the install again and (as you did before) change the domain name when you're asked that question - see how you get on with that.

By working I mean its installed and I can access the web client; heh.

Off topic... I have an Zimbra 5.1 for Debian 4, with its users and mails in another server... Where may I start looking form "moving" this data to my branding new 7.1.1 RedHat 6 Zimbra?

Now if you'd mentioned this earlier I might have suggested moving the whole zimbra install to the new server. If you just want to move the mail to the new server then you can export the mail and import it into the new server (you need to create the user accounts first). You could also use something like IMAPSYNC (go to the wiki and search for that word), you'll should also find details in the forums about migrating users to a new server.
