Trial Install for Proof of Concept

Am working on setting up Zimbra, as a proof of concept for Exchange replacement. I want to set it up so it works for a limited number of our users (primarily the IS department) to show the boss it works.

Does anyone have any links to documentation on setting it up to temporarily work with exchange in a cooperative type environment so I can demo it and possibly get it accepted?

Thanks in advance, searching for this stuff through google puts up a ridiculous amount of results...
