Default SAN Mount Question

We are currently setting up our Zimbra environment and I have a question regarding the mail stores that I hope someone can give some advice on.

We are using ESXi to virtualize the mail stores. We have a SAN set up and it's been divided into a bunch of 1.9TB disks in RAID10. We're starting with 2 virtualized mail stores and we would like both of them to access 1 of the disks. We would rather not split the disk in half.

Do you see any problems with both virtual machines mounting the 1.9TB partition under, say, /mnt/mailstore, and then creating /mnt/mailstore/store1 and /mnt/mailstore/store2 and having each mailstore's /opt/zimbra/store symlink to the appropriate directory?
