Oh dear - whilst I am typing the this the queue has emptied :-)
And, I just found the log in /var/log/ - I only saw the ones in /opt/zimbra/log/ and thought that Zimbra had encapsulated all the logs in one place.
As a matter of post"fix"ed details, here is what was in the /var/log/zimbra.log relating to errors:

and whilst typing this reply, i started by restarting the zcs and when it restarted, all the email started buzzing through to delivery..

Maybe it was me randomly attacking the keyboard between midnight and 3am which did something silly - or maybe it was something to do with the network, but it fixed itself. Maybe all I needed was some sleep :-(
