You can't is the simple answer, it's picked for you.

You can do this via COS.

If you create a COS for each mailbox server, under the "Server Pool" tab, just limit the COS to use one server (but a different server for each COS).

So, say you create the following COS:

mboxserver1
mboxserver2
mboxserver3

and you have three mailbox servers.

Then, after you create a new domain but before you create any accounts in the domain, assign the domain the COS that will limit new accounts to the mailbox server of your choice.

Now, when you create new accounts in the domain, all of them will be on the server specified in the COS.
