CentOS is the easiest set-up for Zimbra (it's identical to RHEL), it's well tested and a stable platform.

The set-up of Split DNS on CentOS or RHEL is well documented in the wiki and covered many times in the forums. However, setting up a Split DNS is not a tutorial in how to install and set-up BIND it's assumed that the administrator can at least do that. If you don't like BIND then try installing a secure and fast DNS server like
PowerDNS on your LAN and use PDNSadmin to administer it.
