Before you go any further I'd suggest you do the following:
a) Go the Documentation pabe and read the Release Notes and Quick Start Installation Guide
b) When you hit a problem search the forums as the questions you're asking have already been asked and answered. Please do some research on the forums first before you post.
c) run the install script like this: ./install.sh --help
I assume your server is behind a NAT router on a private LAN IP address and to save you asking this later, you'll need a Split DNS set-up on your LAN.

The package you are downloading and trying to install is for Red Hat linux. CentOS is not yet officially supported by Zimbra. The same however does install and work just fine as you can see in my profile
As phoenix said, please go through some basic documentation and wiki before proceeding or you would be asking questions on each 'Enter'.
Anyways when you are ready you can continue with
./install.sh --platform-override
Also will advice to move to CentOS5 (if you want to stay with CentOS only) or you may face more dependency issues later on

Yes of course the system will be modified, otherwise how do you expect it to run.
I hope you are running this install on a test machine and not production somewhere. Seing the experience that you have it is highly recommended on a dev box.
