I'd like to install zimbra on our existing office server, which is already running apache 2, php, mysql, svn, etc...

Take a look at the quick start install guide. It has a list of ports and how to avoid port conflicts.

Thanks, I did look at the quick install. It seemed to be saying that I couldn't install zimbra on a machine that already had apache and mysql on it.
So, my question, if I try to install zimbra on this machine, will it recognize my existing installations and use them, will it delete them, or can it coexist?

Nope. Zimbra uses it's own sql, apache, MTA, and LDAP.
If you want them to co-exist, you need to bind them to different ports than you ZCS installation is bound to.
