Default MX record problems

I've been having some problems installing Zimbra.. As you may see from the title..

I'm behind 2 routers both with the firewalls turned off. The first router is at: xxx.xxx.1.1

The second is at:
xxx.xxx.2.1

I have ports 21, 25, 110, 80 and ports 8080 forwarded properly to the host machine. I know they're done correctly because my webserver is working.

I have tried installing with the hosts file directed to:
xxx.xxx.1.xxx mail.mydomain.com
xxx.xxx.2.xxx mail.mydomain.com
xxx.xxx.xxx.xxx mail.mydomain.com <- public IP

I can ping my mydomain.com and it resolves to my public IP.

When installing zimbra and it tries to resolve the host.. I re-enter mydomain.com and it lists:

MX: mail.mydomain.com (my public IP)
Interface: xxx.xxx.2.xxx
Interface: 127.0.0.1

What is going wrong with my MX records?? They should be coming to my public IP then forwarded to my local IP right???

Any help would be much appreciated!

Please post the following so we can validate your DNS setup
Code:
cat /etc/hosts
cat /etc/resolv.conf
dig yourdomain.name mx
dig zcsserver.fqdn.com a
host `hostname` <- note backticks and not double quotes
