Zimbra installs its own instances of both Spamassassin and Postfix in non-standard directories, so strictly speaking you don't have to uninstall anything, but you do at the very least want to turn off those other services so you don't get multiple packages fighting for the same ports, which can get ugly.
But realistically, it's probably cleaner to just do a clean install of the appropriate OS and then throw Zimbra on it. Less likely to overlook something. . .
