Default What kind of mileage do you think I'll get out of this setup?

How many users do you think this could support, probably 75% using the web interface.

Core2Quad 2.16, 4GB ram, hardware raid 1, but on 7200rpm drives

And in order to take advantage of the 4GB, I need to use 64 bit right?

I'm backing up locally in the middle of the night then using s3sync to move a copy to Amazon S3.

300 hopefully.

32-bit will give you about 3.2GB of the 4 you are planning to use. So yes, to use all 4GB you need to go with 64-bit.
