Explain - what got messed up?
Outside of host/hostname files, if you have a proper A/MX for mail.domain.com on install you won't get prompted to change it, you can configure one domain in step 2 (zimbra-ldap).
You can have unlimited domains, so if you forgot just create a domain.com later and put the accounts in that from the start instead of in mail.domain.com

In short: The default domain is the fully qualified hostname of the server. You can easily correct it on install or just add another later.

Via IM the issue was: "named quit and i couldn't restart it" (fixed on simple reboot)
But he was already into the uninstall - learning experience

mmorse had me do the following:

during final config (when it asks you to set the admin password) modified 'zimbra-ldap' settings from mail.mydomain.com to mydomain.com.

works like a charm now!
