The issue gets more sticky the deeper one digs. I'm already hosting mail for that domain using an aged postfix machine. There is an MX entry for mail.foo.example, and when the zimbra server is up and stable and I have mailboxes moved over to it, I'll give it the IP address assigned to mail.foo.example and take the old machine offline. But there is no MX entry for zimbra.foo.example.
