Easy to fix...
Restore the user's mailbox with the prefix command (i.e. restore to another, separate mailbox) from a date just prior to the deletion.
Configure the user's MUA to connect to both mailboxes, and then the user can drag 'n drop the deleted/restored folder from the restored backup mailbox to the regular mailbox.
After the transfer is complete the restored mailbox can be deleted and the corresponding account in the user's MUA deleted.
