Is that processor single core? That could be be slowing things down a tad, the java engine can be a hungry beast, if you can swap in a quad core without too much trouble, you may notice a boost.
It could be the hard drive array too, but you unless you notice the drives being worked very hard, i'd rule this out.
The main thing though, is define 'sluggish'. The ajax client is slower than outlook or a decent mail client, but arguably it offers more feartures, so a lot of people regard that as being a fair trade off.
Running on a lan, from a decent server, on a fast client I can launch the zimbra client, login and read a mail within a few seconds. Closing the tab the client is in and relaunching has it fully open in three seconds, I dont think it gets any faster than that.
