Default what course of action should I take?

I have been testing a zimbra server here at home for a few weeks now. I think it will do what I want but I am not totally sure how to go about it.
I volunteer at my parish with the network and want to do something about the spam that is coming into the email. They use an outside email server now. Can I use zimbra to fetch mail from that server and deliver it to clients spam free?
Our server would be behind a router with a dynamic ip. If this can be done is there any suggested reading you can direct me too?

If you'd like some ideas on combating spam, read through: Improving Anti-spam system - Zimbra :: Wiki & Configuring and Monitoring Postfix DNSBL - Zimbra :: Wiki

If you decide to that you want to fetch from existing accounts:
-The cheesy way would be to setup external imap/pop accounts in the webclient.
-The more automatic way would be to use fetchmail, search the forums for details and possibly use webmin to set it up.

It looks like the best way is to use fetchmail to retrieve the mail and send it thru zimbra. correct?

thinking out loud..... If I install fetchmail and create all the users on zimbra and then change my external server to just 1 email address and have it catch all then it should pull all mail into zimbra and zimbra should be able to sort and send.....
and if that works then all users that are local should get mail as soon as it is sent rather than going thru outside servers and back.... IS this correct thinking so far?

Mike, suggesting webmin was awesome. I cant believe how much this 1 program can do. I wish I had this when I was setting up dns and trying to debug it.....
thanks for your suggestions today.....I just moved days closer to setting up the what I need.
