You might want to consider a secondary but similar domain for your internal Zimbra server, for example chapmans.net.tt (I'm guessing here, dunno if that's even legit, but the equivalent of .com vs .net in the U.S.) and point that second domain to your Zimbra box. Then you can use fetchmail on Zimbra to retrieve all mail from the external chapmans.co.tt, and there won't be two different servers in the world that think they are the only mail server for the same domain.
That said, I think if your laptops would vpn into your network before they tried to send/receive mail it'd probably work; the problem is if the users forget to start the VPN first, they'll still be able to resolve the mailserver at chapmans.co.tt but they'll get the wrong server, which could lead to headaches. . .
