As you're just getting started, I would cut your losses and reinstall. To remove the current install, change to the zimbra user (su - zimbra) and issue the command zmcontrol stop. This will stop all the zimbra processes. Then, exit back out to your normal user and remove the entire /opt/zimbra directory. You can then start a clean install. A working FQDN is critical to a functioning Zimbra install. If you can't / don't want to define one via DNS, you should set one up in your /etc/hosts file.

A working FQDN is critical to a functioning Zimbra install. If you can't / don't want to define one via DNS, you should set one up in your /etc/hosts file.

you really need to have dns configured for the zimbra server; some programs (e.g. postfix) insist on proper dns rather than entries in /etc/hosts

you can get around some dns lookups but you will find it easier to install and troubleshoot if you take care of the dns first. you'll want the server (and any other computers on the local network that expect to connect to it) to be able to see itself:

$ hostname
zimbra.domain.com
$ dig a zimbra.domain.com
10.0.0.10 #which should be the ip address of the zimbra server

you'll see marcmac show this same lookup sometimes like this:
$ host `hostname` #note: those ` are backticks
