I don't really understand the question, are you just looking for a comparison between the two products? If that's the case then take a look at the feature list here: Zimbra Desktop Features - go to the Apple Mail features page then compare them to see which one does what you need.

The question is how is zimbra desktop's offline feature different from apple mail's offline feature?The pros and cons of the two at least Zimbra's over apple?

Zimbra Desktop has an interface similar to Zimbra webmail, and also syncs contacts, calendars, and the briefcase.

Apple Mail does only email.
