Default Zimbra Desktop - on-the-road sync

I'm trying to find out how syncing for Zimbra Desktop works.
I'm testing ZD v.1.0.4 and ZDv2 beta3 on WinXP.

The scenario is for a user on-the-road with slow and expansive connection (GPRS).

1/ Is it possible to sync only message headers (without attachments)? And download attachment when reading.
2/ Can I switch off syncing for some folders? (for example shared briefcase)
3/ How to stop background zdesktop service in ZDv2? In ZDv1 you can right click on tray icon.
