That message just means that the server has sent it, it's not a guarantee that the recipient has received it. You'll see if the message has gone because you'll see it go from the Outbox.
Don't forget that's it's totally optional for the recipient to acknowledge a read receipt request, if he doesn't do it then you'll never know it's been read. This is purely my opinion but I think this feature is a waste of time, servers no useful purpose and contributes to too much wasted email traffic but I guess I'm a lone voice in that opinion.
