Default Evolution connector: calendar&SMTP server

I've setup Evolution connector to Evolution 2.10. I've got the calendar working - and sofar it looks great.

If I create a meeting with someone - and accept it - it can send an e-mail to that person.
Though, I have several accounts setup in evolution - so how can I control what account it is sending from?
At first I thought it was the account marked as default - but that seems not to be the case? (Please correct me if I'm wrong)
The thing is that I NEED it to send though an external SMTP server - and NOT the Zimbra server... Right now it seems to work - but since I have 150 other accounts I would like to know how I can control what SMTP server to use?
