The Licence for Zimbra Open Source doesn't allow you to do that. Search the wiki (and forums) for details of what you may, or may not, do.

we can do ... Inner logo path /opt/zimbra/jetty-6.1.5/webapps/zimbra/skins/_base/logos/AppBanner.png

Like wise we can change...

yes, technically speaking it's easy, but you are not allowed to change the logo, in the OSS version, accordingly to the license terms
