Where are the IM files located in Zimbra?

You should have a chats folder right underneath you inbox folder in Zimbra this is where all the Zimbra IM chats are stored.

I am talking about the actual code on the server. I want to take a look at how the gateways and other "jabber" functions are being handled.

Look under ZimbraServer/src/java/com/zimbra/cs/im and under ZimbraIM/src/java.

Humm, I dont have a "src" directory or any of these locations.

You need to get the ZCS source. Look at Franklin README - Zimbra :: Wiki.
