Can the Exchange migration program move only certain mailboxes?

I'm wanting to test out Zimbra in a organization of 53~ users, and don't want to move everybody over just yet. Is it selective or a convert everyone program?

Yes, you can select which mailboxes to move. You might also want to look at our wiki article on Split Domain set-up if you're going to have two servers running.
