This has been covered once or twice in the forums and, I believe, the wiki.
In the web client you need to hit the 'junk' button, this will forward a message to the Junk folder, a copy will also be sent to the spam training account. The overnight cron jobs will check the ham/spam accounts and train accordingly.
If you're using any other IMAP client you need to forward any spam to the spam account (_not_ the Junk folder) as an attachment - it must be sent as an attachment. The spam/ham account are the ones defined in the Admin UI with a couple of random names and marked as spam account etc. etc.
You can also look in the Junk folder for any positives and clicking 'Not Junk' will move that to the 'ham' account and be trained accordingly etc. etc. ....
