Why I want to do this: I have a static ip with a dyndns-domain (domain.mine.nu). If I send mails, there is always my internal name as the host. Now I want to rename the server to namehere.mine.nu.

There is no tool to do this. So best to reinstall. Or if you just want the domain to change you can create a new domian and move the current users to the new domain.
I can't believe there is no possibility to do this.
I don't want to do a reinstall, because of all the data I had to move arround. The server is running perfect, he only has the false name.
Or is is possible that the server sends the outgoing mails with xyz.mine.nu in the headers?

It's not impossible. It's just not easy with a tool yet. We will provide a way to do this at some point. We just didn't expect so many folks to name their server wrong, or want/need to change it after getting live data in there.
When I startet with Zimbra I also thought it would only be a test server. But I was so fascinated that I took my mails/contacts/etc. in there.Quote:

So it looks like I have to do a reinstall. Is it possible that i backup my data and copy it back to the new install?
Which dirs/files will I have to backup?
