We have a customer with a dedicated Zimbra server that is looking to move into a hosted shared envirnment already running in our Data Center. What is the best way to integrate this dedicated setup into my shared environment?

There's no such thing as the 'best way', it would depend on the ZCS versions & operating systems used and whether you're moving from a 32bit to 64bit environment. Did you look at any of the forum threads and wiki articles that cover a server move to a new environment? Did any of those fit your scenario (they should)? You could also look at ZeXtras for an easy method of moving a server.

telescop: We are just now starting on this same task - ZCS 7.1.2 on RHEL4 32-bit to CentOS6 64-bit. It would be helpful if you share your findings; we'll do the same.
