The ZCS system does have an A record and /etc/hosts configured. So far all other Zimbra Desktop and administration operations are functioning. This includes e-mail via our production relay MTA. Sharing calendars is the only problem we have run into.
If shared calendars depends on e-mail functioning, we appear to have that requirement covered.
I should have mentioned that this is just an evaluation setup.
It appeared to us the scenario we are attempting was supported given the following information for "Configure DNS":
You must configure a relay host if you do not enable DNS. After ZCS is
installed, go to the Global Settings>MTA tab on the administration console and
uncheck Enable DNS lookups. Enter the relay MTA address to use for external
delivery.
Note: Even if a relay host is configured, an MX record is still required if the
ZCS server is going to receive email from the Internet.
and the instructions "Installing Zimbra Software" indicate the MX record is a suggestion. The relay MTA scenario appeared to be supported.
We'll take another pass in an additionally isolated environment.
