The same as it's always been, run the install script to upgrade you server. I'd suggest you first read the Release Notes and see if there's anything in there that may cause you problems, full upgrade instructions are always included in there. Don't forget to take a suitable backup before any upgrade.

Bill
Bill, I notice the release notes for 7.2.2 open source edition say "to upgrade from 6.0.x to 7.2.x ...", whereas the release notes for 7.1.4 and below include "5.0.x" in their list. I am merely upgrading from 5.0.18 to some version of 7, any advice on which version of 7 will be the most trouble free in this case? Perhaps this is why the original poster was unsure of the upgrade path, due to the omission of 5.0.x in the 7.2.0 release notes. Thanks and thank you for the work on the forums, I have referred to them many times and rarely don't find a reply that solves the problem! -Justin
Upgrade directly from 5.0.18 to 7.1.4 went very smoothly. Good job Zimbra engineers! <3

Glad to hear it LMM. If any of your web client users complain about the fonts in the message list looking bad, refer to this article: Zimbra 7 Web Client Font Problem. From it I used this part
edit the file: /opt/zimbra/jetty-6.1.22.z6/webapps/zimbra/skins/_base/base2/skin.properties
in the fonts section, look for the line that reads: FontFamily-default =
and change the font chain to something normal. (I used "tahoma, geneva, verdana, arial, helvetica, sans-serif")
then run the command:
zmprov flushCache skin
For Zimbra Desktop users, edit the windows file:
c:/program files/zimbra/Zimbra Desktop/jetty/webapps/zimbra/skins/_base/base2/skin.properties
edit default font line:
FontFamily-default = font-family:tahoma, geneva, verdana, arial, helvetica, sans-serif;
