Hi this is my first post and I want to introduce a problem and a possibile solution for people that have my same situation:

I have a customer who deletes a 500 Gbyte folder and ask me a restore
I backed up my zimbra folder with cold backup procedure, written here:
zmcontrol stop (from zimbra user)
cp -rp /opt/zimbra/ /opt/zimbrabk/ (form a sudo user)
zmcontrol start (from zimbra user)

This is the procedure I follow:
zmcontrol stop (from zimbra user)
sudo mount --bind /opt/zimbrabk /opt/zimbra/ (from a sudo user) <<< thanks to elgato @ IRC #zimbra for give me the command
zmcontrol start (from zimbra user)

After this I have an old instance of Zimbra running and I do a backup of a single folder, there are many software to do this, I use: ImapSize free software for windows that save single IMAP folder to disk in folder + EML files

Restoring orignal instance of Zimbra:
zmcontrol stop (from zimbra user)
sudo umount /opt/zimbra/ (form sudo user)
zmcontrol start (from zimbra user)

Now that I have original Zimbra folder I restore, with ImapSize again, files EML on IMAP folder
Maybe there's a best strategy, back up and also restore, but HTH
bye
