Default stopping zimbra completely

I have a zcs 5.0.18 backup off-line server of a zcs 5.0.18 on-line and working server.
In server backup i stopped zimbra and delete zimbra user crontab ( I backuped the zimbra crontab), but I contine to find zimbra process (like zmmtaconfig or java) in top command that usage CPU, you can see below:

how can stopping all zimbra processes in backup offline server?

You stop ZCS by running the "zmcontrol stop" command, that works for me.

BTW, you should upgrade to the most recent version of ZCS as version 5.x is no longer supported.

I'm migrating to azc 7.1.4, but I want to know why after stopping zimbra (using "zmcontrol stop" obviously) and after delete zimbra crontab , after a while appear again zimbra processes (like zmmconfig and java). Who starts they again?
