Post Append BACKUP Script to a LOG

OS used: Ubuntu 10.04.1 64 bit
Zimbra version: 7.1.3

I was wondering how to append the following cron job (bash backup) to some sort of log:

I took the backup script "A Simple Shell Script Method" on Open Source Edition Backup Procedure - Zimbra :: Wiki and modified to my needs.

I did not change anything on the process.. Just commented the ncftp part and changed the backup directory due to the fact that the backup will be done on a local hard drive.

I made this script executable and added it into a weekly cron job.

I would like to know if someone can tell me what is the best way to efficiently log the process…

So I just added "2>&1 >> /var/log/script_output.log" next to to my cron job.
