Default Format array and need to keep all email for later install

Right now we use foss 7.0 on sles 10. We are getting ready to upgrade the /opt array with bigger disks and a new os, sles 11. The plan, right now is to format all arrays and install sles 11, install zimbra and later install bigger disks. My question is this, obliviously we want to keep all users email. What is the best way to do this so when sles 11 and zimbra 7.x.x is installed I can copy all users email back to the new zimbra install? We do have zimbra backed up using backup exec.

You should be okay if you just preserve /opt/zimbra.

Copy all of /opt/zimbra (when Zimbra is shut down) to another system or partition.

After the OS reinstall and upgrade, reinstall Zimbra (same version) and then copy back /opt/zimbra

Actually, there has been a new development in the email server saga! The old server hardware is malfunctioning and we have a new server to replace the old server. The new development is this: new server is 64 bit and runs 64 bit SLES11 and 64 bit Zimbra! I really need to be able to copy the old /opt/zimbra to the new /opt/zimbra but the new /opt/zimbra is 64 bit and the old is 32 bit. Will this work? I suspect this will break the 64 bit zimbra. Email and files stored in zimbra are the pressing files to keep. I think users email is housed in the messages folder of the store? And where might the files uploaded to briefcase and the like be stored? Will copying these folder over to the new 64 bit zimbra work?
