Default Moving zimbra server to new host

I currently have zimbra ose 7.1.1 running, and I would like to move it to a different host. The directions listed here doesn't seem like it will work, since I'm basically adding a host just for zimbra.
Right now my network is just a single system: example.com. I would like to move zimbra over to zimbra.example.com while retaining example.com for other purposes, but have my email addresses remain in the format "username@example.com".
Is there a really simple way to just export the user data and then import it into the new server? That's all I am really worried about.

I'm actually most concerned about having my email addresses remain in the format 'user@example.com', Is that possible?

Depends on how many users you have. If not many, you can export the data in webmail. Then set up new server and import in webmail again.

Well, decided just to blow away my old install and start fresh.
Now that my zimbra instance is located at zimbra.example.com, is there a setting that allows me to send and receive email for example.com?

How about using multi domain & alias domain?
