i found the "automagically" way of discover the languagge settings, on control panel's reginal settings, but i dont want to change these settings due to database conection settings, etc, but i waht to forche zimbra to use spanish for all the labels.

Is that possible ?

Which version of Zimbra are you using? It's a feature of the current 5.x version and it's in the user preferences tab.
