How to backup Zimbra Users Mailbox only.

I've already asked you if you've looked at some of the backup scripts in the forums and/or wiki, have you? The search link at the top of this page will help.

You can backup user mails and remove Zimbra mails from the Web UI (at least in versions 6 and 7 as far as I know).

Have you read the administrators manual?

Login to your account
Click Preferences
Click Import/Export on left side menu
On the right under Export click Export
Save the file locally for safe keeping
